Another day and another successful attempt to sneak vegetables into my diet, this time with my Spinach and Chicken Slow Cooker Curry !
As I said last time I love a theme and they did not disappoint this month either as they threw out the challenge of Spring Ingredients. Now I must admit I am rubbish at knowing what’s in season but thankfully in this day and age I have the internet to tell me, phew!
I was also feeling all over excited following, not only the success of my sweet potato fries, but also now my courgette spaghetti. In fact I was considering taking up Yoga and exercising to go along with my new healthy diet, but I opted for an extra slice of cake instead (got to keep the world in balance!)
Anyway I saw that in season right now is spinach! Oddly Jonathan and I love spinach and it’s often my go to bit of greenary as I like it wilted as well as fresh and crunchy, so I decided to run with it and created my Spinach and Chicken Slow Cooker Curry. Pop it on in the morning and come home to a lovely warming dinner. It’s ridiculously simply to prepare and I’ve made it mild for even little mouths. Feel free to add chilli if you like your curry with a kick!
Note: One of my lovely friends, Kirsty has now made this twice! Her top tip for those of you that like vegetables (so most of you I’d suspect) is as well as the chilli add a red pepper.
- 600g skinless boneless chicken thighs, chopped
- 4 cloves garlic(crushed
- 1 tbsp grated ginger
- 2 tbsp garam masala
- 1 tbsp tandoori masala
- pinch of salt
- 500g pasatta
- 125g spinach
- add everything apart from the spinach to your slow cooker and mix thoroughly
- cook on low for 6-8 hours (although longer doesn't hurt)
- half an hour before you're due to serve add the spinach to the slow cooker and replace the lid. This will just wilt down on top and keep it's green colour
- serve on a bed of rice
